4 1/2 LBS Whole Chicken Wings
Directions
In a large bowl, prepare the brine by combining water, salt, brown sugar, black peppercorns, and guajillo peppers. Stir until the salt and sugar are dissolved.
Place the whole chicken wings in the brine and refrigerate for a minimum of 4 hours to allow them to absorb the flavors.
Preheat your smoker to 225°F.
Remove the wings from the brine, pat them dry, and arrange them in a single row on the smoker grates.
Smoke the wings at 225°F until they reach an internal temperature of 165°F, and the skin becomes crispy. This may take several hours, so be patient!
