Citrus-Lime Tuna with
Black Bean Corn Salsa and Rice
2 Tuna Steaks
1Tbsp Olive Oil
2 Tbsp Lime Juice
1 Tbsp Fire Salt
1 can Sweet Yellow Corn 1 Cup, Kernels
1 can (11 oz), undiluted Soup, Black Bean Canned
2 Plum Tomatoes (diced)
2Tbsp Lime Juice
2 Tbsp Cilantro
1tsp Salt & Pepper
1 cup White Rice
- Mix Oil, Lime Juice and Seasoning, in a large zip-lock bag or container, add Tuna Steaks let marinate for at least 15 minutes.
- In a medium bowl, combine Corn, Black Beans, Tomatoes, Cilantro, and Lime Juice, and salt and pepper, set aside.
- Pre-heat Grill Pan add 1T of the Olive oil pan, once heated add steak and turn on Medium heat, Place rice in a rice cooker or cook per instructions. Cook steaks until 145 degrees, cooking about 5 minutes per side.
- Plate with Rice, Corn Salsa the Steak, Squeeze a Fresh lime on Top after finished cooking.
