Mississippi Pot Roast is a combination of five simple ingredients that all cook together in your Instant Pot.
It’s typically made with a chuck roast, which is cheap and easy to find at most grocery stores. You can also make this with other cuts of meat, like Mississippi Pulled Pork.
Cooking a chuck roast in your Instant Pot makes for incredibly tender results, and the other ingredients added to this roast give it incredible flavor!
Drizzle oil into the Instant Pot, wait for about 30 seconds, and then use tongs to place the roast in the pot. Do not move it for 3-4 minutes until it's well-seared and browned. Use tongs to turn the roast onto another side for 3-4 minutes, repeating until all sides are browned.
Switch the Instant Pot to "pressure cook" on high and set it for 60-80 minutes (60 minutes for a 3-pound roast, 80 minutes for a 5-pound roast).
Sprinkle the top of the roast with the ranch dressing mix and the au jus mix. Place the peppers on top of the mixes and add the butter.
Put the lid on the pot and lock it in place. Ensure the vent is set to the sealed position.
When the cooking time is up, allow for a natural release for 10 minutes (do not touch anything on the pot, just let it depressurize on its own for 10 minutes). After 10 minutes, turn the vent to the venting release position and allow all the steam to vent, and the float valve to drop down before removing the lid.
Serve the Mississippi Pot Roast with noodles, rice, or mashed potatoes. Enjoy!
