Brine the wings
If you’re looking for an easy and delicious way to make wings, brining them is the way to go. Brining helps keep the wings juicy and flavorful when they are cooked. To make a brine for your wings, combine
1 1/2 Gallons of Water
1/2 Cup Salt
1/2 Cup Brown Sugar
1 TBS Black Peppercorns
2 Guajillo Whole Dried Peppers.
Stir until all of the ingredients have dissolved. Place your wings in the brine and let sit for at least one hour (or up to 8 hours) in the refrigerator.
Smoke the wings
When it comes to smoking the wings, you want to keep a few things in mind. First, use low heat so that the wings don’t burn. You can also add wood chips to the smoker for an extra layer of flavor. Start by heating your smoker to 225°F and prepping the wings. Place them on the rack with enough space between them so they cook evenly. Then, add your wood chips, if desired.
Once the wings are ready to go, place them in the smoker and let them cook for 2-3 hours, or until the internal temperature reaches 165°F. Monitor the temperature and check the wings occasionally to make sure they’re not burning. When they’re done cooking, remove them from the smoker and let them cool before serving. Enjoy!

Ingredients

1 1/2 Gallons of Water

1/2 Cup Salt

1/2 Cup Brown Sugar

4 1/2 LBS Whole Chicken Wings
Directions
Place wings in brine for a minimum of 4 hours.
Place wings in the smoker at 225 Fahrenheit on a single row until they reach and maintain a 165 internally and maintain for another 20 minutes so skin is crispy.
Toss wings in Ritabeata’s Sweet Virginia Love BBQ Sauce or your favorite Ritabeata sauce.
Place wings on either a heated grill or in the oven on broil for 5 minutes to add extra flavor.
