Citrus-Lime Tuna with Black Bean Corn Salsa and Rice

Ingredients

  • 2 Tuna Steaks
  • 1Tbsp Olive Oil 
  • 2 Tbsp Lime Juice
  • 1 Tbsp Fire Salt
  • 1 can Sweet Yellow Corn 1 Cup, Kernels
  • 1 can (11 oz) Black Bean Canned
  • 2 Plum Tomatoes (diced)
  • 2Tbsp Lime Juice
  • 2 Tbsp Cilantro
  • 1tsp Salt & Pepper
  • 1 cup White Rice

Directions

  1. Mix Oil, Lime Juice and Seasoning, in a large zip-lock bag or container, add Tuna Steaks let marinate for at least 15 minutes.
  2. In a medium bowl, combine Corn, Black Beans, Tomatoes, Cilantro, and Lime Juice, and salt and pepper, set aside.
  3. Pre-heat Grill Pan add 1T of the Olive oil pan, once heated add steak and turn on Medium heat, Place rice in a rice cooker or cook per instructions. Cook steaks until 145 degrees, cooking about 5 minutes per side.
  4. Plate with Rice, Corn Salsa the Steak, Squeeze a Fresh lime on Top after finished cooking.
